Probably only one.
Season 1 adapted Vol.1 & 2.
The reason i say Season 2 would adapt only one volume is because of the way the story is structured, which is based on Arc's, and the first Arc of the Series is 3 Volume long (with Vol. 3 being longer than either Vol.1 & 2, as it has more content).

Going to admit that I didn't expect this to get a second season. But hey...I'll probably check it out. The show had some issues, but it was generally fine. Kind of curious to see how things play out.

Plus more of the Queen would be a win

Hmm... there's actual good otome isekai coming out in 2023 though, not sure how this is going to stand out. I wasn't really fond of the pacing the first season, hopefully that improves.
