Actually you can safely assume that those with children who don't have the Hyoudo family name are mistresses. Koneko, Kuroka and Ross are unknown, the cats didn't state their full names and Ross' family name was never revealed.
So far we have Rias, as Issei took her family name. Asia and Ravel who are confirmed wives beyond any shadow of doubt. Zenovia, Irina and Akeno still use their maiden names so they're most likely mistresses.

Uh, no, not really. Marriage doesn't obligatorily means they have to take his name, he's not a noble.

That's the case for Rias, but not for the other girls.

As Captain Orange so kindly pointed out, that applies to Rias and maybe Le Fay and Kunou. Akeno is technically exiled from the Himejima family and Ravel left the Phenex.

I agree they can keep their own names. He may have even suggested it since his own last name is only beginning to establish itself. The only one that I think possibly didn't marry him would be Akeno and that's only cus of her statement of wanting to be his mistress. Though by the time they are ready for marriage she may have decided she wants it all verses just a mistress.

I think "mistress" might stretch it out a bit (even for Akeno in the future). Perhaps "concubine" is more fitting, seeing that Ise wanted to be together with all of them and the children are all biologically and legally his own but outside the legal wives, they carried their moms' surname.

I'm one of a few (if there's any) who support Sona in Issei's harem.. Honestly, I liked how Sona's and Issei's interaction in the novel and frankness she showed to him after she decided to befriend him (in already translated part, I mean) I got the kuudere vibe from her.. I would felt sorry for Saji if it became true if he didn't any who love him already but looking at the prospect, he will own his harem although not global like Issei, so not really much sorry for him..

The main reasons why people don't support Sona in Ise's harem are either:
1. People who support Saji
2. People who don't want the harem to be too big
3. People who don't want it to be predictable and boring such as Ise getting most if not all of the girls.

I'm on no. 3, if Ise gets Sona, it'd seriously be a downer. I want the story to include girls like Sona that can interact normally with Ise and not be in love with him. Especially since Ishibumi set up that Sona will only marry one smarter than her, letting her chance her principal for the sake of letting Sona enter Ise's harem would be lazy writing . If he simply changes that, he might as well have Serafall, Grayfia, Venelana, Griselda, Yasaka, Gabriel, Tsubaki, Valerie, Kuisha, Seekvaira etc. All enter without limit. Some people may be happy but to me that would make everything look like stagnant writing and extremely boring. If that would be the case, might as well have Ise be the only male in the story. Why bother to even introduce a single guy at all if Ise is the only one with the romance in the story.

Saji is a col guy who deserves happiness, I think the harem is already good enough as it is, (Unless Ishi adds some MILFs, since that'd add variety ) and I haaaaate when the MC is the only one with romantic interests.

^well, if the writing is good, why not? besides DxD isn't known for its great storytelling either way, but yeah, but some part of me felt irk at the stagnant relationship between Saji and Sona, and when I first read the spoiler of Sona open with Issei (which vol, i can't remember), my heart jump and I change ship immediately, well mostly because Issei did something that Saji can't do that is make Sona open her heart although I knew that mostly because of Rias but it's still irk me.. But let's be honest I think this is unlikely to realize, if I say so myself although will never stop hoping..

Ise isn't dumb, it's just almost everyone in the series smarter than him.
