She said in one of the previous episodes that to transform she needs to either be given some blood or to eat some wheat from Parsloe and wheat is limited to a porch on her neck. So she could transform but it would use a wheat which is very limited.
And "disappearing" was just to troll Lawrence. It is their general dynamic.

Instead teaching about economy, the show is teaching about risk of investment. Lawrence loses big time by getting into currency investing. He got injured and put Holo in danger. To save the day, Holo has to turn into Dark Soul boss mode. Holo's transformation in the old anime looks like a fox. Holo's transformation in the new anime looks like a shiba inu. Perhaps, Holo is trolling speculators by transforming to the Dogecoin icon.
Lawrence's invovlement in currency investing looks like monetary gain on surface. He gets unwanted attention from nobles and church. His gain cannot compensate the risk he is getting. Spice and Wolf is not the only story about currency investing. One manga talks about fictitious investing loses by girls. Unlike other countries' investors, Japanese investors put a lot of attention on exchange rates. The girls in the manga suffer a lot from their investment decision. Holo isn't the only wolf in the world, but some people have their own way of managing them...like a blonde shepherd girl protecting her flock of sheep .
All traveling and no good food makes Holo a dull girl! Though she can entertain herself well enough with Lawrence's companionship. But it's no substitute for her apple fix, and she's willing to spend as much of Lawrence's money as she can use . Welcome to Provoron! A small town and not the best place to show off Holo's incredibly eye-catching town girl look! Though Lawrence better watch out that he doesn't entice Holo too much with the power of delicious fruit or her ears are going to give her away even with her headwear . Ruvinheigen is a holy city that practices frugality...even if the holy men make the most profit and are named after a Saint Holo knew personally and bit the arse of. Lucky guy . Lawrence is making a deal with Cho, and it's all well and good to have faith in God...but you should have more faith in the Wise Wolf who with a sterling performance as a tipsy drunk exposes some underhanded tactics and helps Lawrence negotiate an even better deal for the both of them. That's some stellar "drunk" teamwork . Lawrence can put his foot down all he wants, Holo can throw her tail, puppy dog eyes, and threat of leaving him to make him give in to her desire to eat and drink to her full ! It's not like Holo has much to worry about on a path with wolves, though she smells a presence she's not too fond of. Not a sorcerer, but a shepherd, and a cute blonde one at that. Holo doesn't seem to care for that aspect and Lawrence getting chummy with her either .

The shepherd girl is the first love rival, although some viewers of old anime think she is Holo's second love rival. At least, she is the second girl whose look stunned Lawrence on scene. Holo is the first girl whose beauty stunned Lawrence. Holo is not too fond of Lawrence's reaction, or the musical instrument of the shepherd.

Quite the roller-coaster with that merchant. Thought he had the total edge and Holo just helped Lawrence utterly cut him down. Though that's what you get when you are cheating people! Getting the tables turned when the trick is revealed is just how it goes for that type.
The relationship between Lawrence and Holo remains totally cute. She's already leaning hard into the whole benefits of being in debt . They already had the agreement to go North together, but hey a debt is another perfectly good excuse. Not that he could seriously force her to make good on it since...giant wolf trumps all . But they have a comfortable dynamic. Cute girl at the end certainly stunned Lawrence a bit. But we'll see how things play out there. No surprise that Holo wouldn't love shepherds. Although I'm sure there isn't one that could actually stop her from getting sheep .

Who can resist receiving a blessing from a cute shepherd voiced by Mai Nakahara? Well, other than Holo who obviously doesn't care for her at all, but still .
Nora seems like a genuinely sweet and sincere shepherd girl, with pretty good skills for her age and experience level (enough for Holo to at least concede that much) and Lawrence is willing to pay her to keep wolves away on the road to Ruvinehigen. Because he can never resist the chance for a new business opportunity ! But wait, he has Holo! And she's much cuter! He doesn't need some blonde shepherd! Though if he can agree with a straight face that Holo is cuter, she can't refuse him . Nora grew up in a shelter with nothing until she found Enek, her dog, and the staff she uses to be a shepherd so now she's working her way to earn money to become a tailor. And she appreciates what company she can get . Nice of Lawrence to give her some advice as a merchant so she can make more money. God never said no to a good side-hustle . Holo would rather be able to comb her tail in piece and without having to watch Lawrence get chummy with another girl, though Lawrence is in it for the long-game of developing feelings with Holo! Smooth with the ladies that he is! At least nobody makes Holo laugh like he does . I like that little look Holo and Enek exchanged at the end there . They've finally arrived in Ruvinheigen! And Lawrence has some suits of armor to exchange! Though people keep giving him the side-eye over them . Holo finally gets her good beer and food and is wasting no time flirting with Lawrence. Heck, even if they get caught, she can always abscond with him in her mouth. Totally romantic ! Lawrence takes Holo to his home...away from home, with the merchant company from his homeland! Though he won't bring her inside until she's officially his bride, but at least she can settle for some bread this time around . Look at Lawrence meeting with Jacob, the surrogate father of all Rowen Merchant Association! Who knows all your embarrassing stories like how much you wet the bed at camp or were nervous to go into brothels . Hmm...looks like Lawrence's dealings in Posoron are catching up to him .

Lawrence and Holo manner of speaking with eachother, you can tell they're much closer now after the events in the previous town. Need a gif of Holo dropping the jerky from her mouth when Lawrence tried to be smooth lol

Judging from the latest episode, I'm guessing there's something off about the arnour Lawrence purchased. I didn't realize it, but Holo probing about the armour in Episode 7 showed that something was up, but I guess neither Lawrence nor myself understand Holo well enough for that to be a tell that something was off.

Holo just knows how to handle things. Lawrence was right that she'd be upset about having this girl traveling with them. But he got completely outplayed since she also had legitimate reasons to be against people traveling with them. And it wasn't tough for her to take control of the conversation from there. His one "win" was getting Holo to laugh her head off for a good while at his expense . It did work to cheer her up, though I'm not sure it's a method he wants to use too often!
Their relationship is cute and fun. There are good reactions between them, but they aren't necessarily losing their heads over every little thing. There's a little more maturity with them that makes it a great ride. Considering some of Lawrence's embarrassing secrets are being spilled I'd say it's a good thing Holo is waiting outside . Nora's situation does seem problematic. At best she's living a dangerous life making less money than her skills would demand. Considering her dreams it probably is a good idea to try and make connections with merchants and take on more dangerous jobs if only to move on to a career that's safer . The vibes are a bit iffy around Lawrence right now on the business front. But I guess we'll find out soon enough.
