About bootlegged dvd's

I got one question, how do they add "selectable subtitles" like chinese and english subtitles? I'm just curious about how they do

The same way they do with "real" DVDs... Not sure I really understand the question myself?

i.e. The DVD format supports multiple subtitle tracks, so bootlegs do it the same way as regular DVDs.

Ok I'm going to be more specific. I just wonder how they get the subs and then add the subs to the dvd's

You're going to be much more specific than that. I still don't understand what it is you are asking. Is it a basic "how do you produce subtitle tracks on DVDs" question.

They, um... get a translator or just "find" some scripts. They then use a DVD authoring program to add in the subtitles...
