She
is in a different body, the body of someone who'd killed three of the Demon King's generals. Even knowing that he's an adventurer with a relatively low level, she probably did figure he was pretty capable and that that ability may have carried through to herself.
Also, bear in mind that she'd up to that point lived in the palace with bodyguards at her side 24/7, bodyguards who clearly maintained that there was nothing remotely inconsiderate of her talking down to those below her on the social ladder and that even challenging her biased and ignorant judgments was worthy of their sword. She's never faced a "fight" that she couldn't win from her understanding and probably had never really been taught to show respect to anyone except for the greatest heroes and the highest nobility. Given that, it doesn't seem all that odd that she'd make some scathing remarks toward those around her, especially if encouraged by Megumin.
