Given their personalities though, this doesn't really come across to me as "keeping them from learning how to grow stronger faster" and more "delaying further outbursts and accusations of falsehood". They're not likely to believe him so it wouldn't do that much good and really the delay doesn't slow their growth as much as it allows them to get along a little longer.
As for the fruits being left out, in the novel the customers liked to take a fruit and stir it around in their drink to make it stronger. Since it's a bar I suppose it's assumed that people will know about them.
