Well it came as a shock to Subaru at the end of episode 15 but it's not like there's any doubt in her feelings to Subaru. Even if she doesn't remember it, Subaru knows how far she's willing to go for him.
The most Subaru's ever got from Emilia is the desire to be accepted and treated as an equal friend. He really should just go for Rem. The show can end happily with a Subaru/Rem couple with Emilia as a queen and Subaru as a trusted friend.
