Keep in mind, her armors do need to be repaired when damaged or destroyed. In the manga, while fighting Azuma on Tenrou Island, she noted she couldn't use either the Purgatory Armor, or Armadura Fairy, as both were still broken (from the Tower of Paradise and Edoras arcs respectively).
The anime had had Erza use the Purgatory Armor in filler though, so they went ahead and altered the Azuma fight to have her use the Purgatory Armor to tank Azuma's Tower Burst, and afterwards note that the Armadura Fairy was broken.
