Archer is Shirou of the future. He can be summoned as a servant because heroic spirits live outside of the timeline, which means it's not surprising if we see a Darth Vader as a Servant.Shirou actually managed to accomplish his dream in some form, to become a hero. He chose to be a heroic spirit out of his own will to save people.

I went ahead to read athe spoilers of FSN anyways, and at the end, when Saber wishes to go back to her time and end her life the way it was... does it mean she can't be summoned anymore?

Maybe. The Holy Grail is more than capable of removing her from being a heroic spirit and letting her end her life normally, but that doesn't mean she won't become one after she changed her history, as some heroic spirits are forced to be one. Even if she didn't become one, there's more than one candidate for the class Saber. Saber's not the only legendary swordmaster in history.
