The Church controls the southern lands, where Lawrence meets Holo, but not the northern pagan lands where her home lies. It makes sense that Lawrence, as a man who between the north and south, would have heard pagan myths that people in the south wouldn't hear because of the Church's dominance.

But even so, pagan myths are dime-a-dozen - each region has it's own deities, and most towns weren't known by name.. as the books point out, even naming a village or region was sometimes considered dangerous by pagans who felt it might draw the Church's eye to their home if they were important enough to be named.
