The only thing Shirou "learned" from Archer was how to use UBW. The Eye of Mind is something Archer gained from fighting so damn long, which is independent from his magecraft.

Sword skill is the only thing Shirou can copy. Shirou can't copy Servant skills like those. Also, Archer got Eye of the Mind from his combat experience.
